Dans une sauteuse, les faire revenir dans l&#8217;huile d&#8217;olive puis laisser cuire \u00e0 couvert dix minutes avec le m\u00e9lange de quatre \u00e9pices et le thym. Laisser refroidir. R\u00e9server.<br \/>\nCouper les fromages de ch\u00e8vre en tranches. Couper chaque feuille de brick en deux puis les badigeonner d&#8217;huile d&#8217;olive avec un pinceau.<br \/>\nGarnir chaque demi-feuille de pomme cuite, d&#8217;une tranche de fromage de ch\u00e8vre et d&#8217;un peu de miel. Plier la feuille de brick en triangle. Poser les samossas sur une plaque allant au four recouverte de papier sulfuris\u00e9.<br \/>\nParsemer de graines de s\u00e9same. Tr\u00e8s parfum\u00e9, le vin est extraordinairement gras, souple pour ne pas dire onctueux.
