Pelez et \u00e9mincez l&#8217;oignon.<br \/>\nDans une casserole, faites chauffer 3 cuiller\u00e9es \u00e0 soupe d&#8217;huile, puis faites revenir les carottes, les \u00e9chalotes et l&#8217;oignon en remuant pendant 2 minutes \u00e0 feu moyen.<\/p>\n<p>Saupoudrez de farine. Salez, poivrez et m\u00e9langez. Versez le vin rouge. Ajoutez le thym et le laurier. Laissez mijoter 20 minutes \u00e0 feu tr\u00e8s doux, en remuant r\u00e9guli\u00e8rement. Coupez le filet de b\u0153uf en gros cubes.<\/p>\n<p>Dans une sauteuse, faites chauffer le restant d&#8217;huile, puis faites dorer la viande. Tr\u00e8s parfum\u00e9, le vin est extraordinairement gras, souple pour ne pas dire onctueux.
