D\u00e9posez-les c\u00f4t\u00e9 peau dans une po\u00eale bien chaude sans mati\u00e8re grasse et faites cuire jusqu&#8217;\u00e0 ce que presque toute la graisse soit fondue (\u00e9liminez-la au fur et \u00e0 mesure).<\/p>\n<p>Retournez les magrets et poursuivez la cuisson quelques instants c\u00f4t\u00e9 chair. Salez, poivrez, couvrez d&#8217;un papier aluminium et r\u00e9servez au chaud.<\/p>\n<p>Nettoyez les c\u00e8pes puis faites-les sauter dans une po\u00eale chaude beurr\u00e9e pendant environ 10 min. Tr\u00e8s parfum\u00e9, le vin est extraordinairement gras, souple pour ne pas dire onctueux.
