Mettez l\u2019huile dans une cocotte profonde mais pas trop large, faites dorer en plusieurs fois les morceaux de<br \/>\npoulet. Si votre poulet est gras, faites dorer sans huile. Coupez le gingembre en morceaux.<br \/>\n2. Quand les morceaux de poulet sont dor\u00e9s, ajoutez le gingembre, les gousses d\u2019ail en entier, les badianes, continuez<br \/>\nla cuisson pendant 1 min.<br \/>\n3. Ajoutez le vin jaune chinois, la sauce de soja, le sucre candi, un peu de cinq \u00e9pices en poudre et un peu de poivre. Baissez le feu d\u00e8s l\u2019\u00e9bullition.<br \/>\n4. Laissez mijoter couvert pendant 30 \u00e0 60 min.<br \/>\n5. Augmentez le feu pour r\u00e9duire la sauce en m\u00e9langeant de temps en temps. Ajoutez l\u2019huile de s\u00e9same. M\u00e9langez de nouveau. Tr\u00e8s parfum\u00e9, le vin est extraordinairement gras, souple pour ne pas dire onctueux.
